Jaggery is a product obtained from sugarcane by evaporating its water content. It is called Kokuto in Japan, Gur in Pakistan, and Hakura in Sri Lanka. Jaggery is obtained in an unrefined form, retaining its nutritional and medicinal values. Due to its nutritional content, there are many benefits of eating jaggery.  Jaggery composition:

The composition of jaggery includes sucrose, invert sugar, moisture, and insoluble matter. The insoluble matter contains ash, protein, bagasse fines, vitamins, and minerals. Gur is a sweetened jaggery containing minerals, proteins, glucose, iron, and fructose. Jaggery’s color ranges from golden brown to dark brown.

Jaggery is a nutritional powerhouse compared to refined sugar, which provides empty calories. It is rich in vital minerals such as calcium, magnesium, potassium, iron, and phosphorus. It also has traces of other minerals, such as manganese, zinc, and copper. Essential vitamins such as A, B-complex, C, and E are also found in jaggery.  

Jaggery also has long chains of sucrose that release energy gradually, compared to sugar, which gives immediate energy. These long chains lead to a sustained release of energy that does not cause sudden energy spikes and crashes. This unique combination of nutrients and minerals makes it a healthier alternative to refined sugar.  

Jaggery preparation:

Jaggery is manufactured on a small scale by farmers. Fresh juice extracted from sugarcane, filtered and boiled in wide, shallow iron pans with simultaneous stirring. Soda or okra juice is added to the cane juice while boiling.  

During the boiling phase, brown foam forms, which is removed regularly to give the jaggery a golden yellow color. After achieving the required consistency and thickness, the juice is poured into small and medium-sized aluminum molds and left to cool.  

Once cooled, the jaggery solidifies and is packed, stored, and transported as blocks. Jaggery is available in liquid, solid, and granular forms.
